Ingredients:
2 medium sized beetroots
1 chopped onion
2 tsp oil
3 green chillies cut lengthwise
Few curry leaves
1 tsp mustard seeds
2 tsp urad dal
Salt
1/2 cup Groundnut/peanut unsalted
Method:
Peel the beetroots. Cut into half and pressure cook it. Allow it to cool and then grate it.
Coarsely grind the groundnut/peanut
Add chopped onion, groundnut powder and salt to the grated beetroot.
Heat oil in a kadai. Add mustard seeds, urad dal, green chillies and curry leaves. Fry till urad dal turns slightly brown. Mix it with the beetroot and serve
