Ingredients:
2 bitter gourd
1 raw mango
2 tbsp grated coconut
1 tsp coriander seeds
1/4 tp methi seeds
2 tsp urad dal
2 tsp black sesame seeds
10 Kashmiri red chillies
Salt
1/2 cup jaggery
2 tsp mustard seeds
1 sprig curry leaves
Method:
Dry roast grated coconut till it turns slightly brown . Keep aside.
Fry coriander seeds, methi seeds, urad dal , black sesame seeds and Kashmiri red chillies till it leaves aroma and grind it along with coconut into a fine paste.
Wash and slice bitter gourd. Apply salt and keep for 15 mins. squeeze the water and fry it in oil till crisp..
Cut raw mango into bite sized pieces. Boil it along with jaggery. When it is half done, add the bitter gourd, salt and boil for 10 mins.
Add the ground masala and cook for 5 mins.
Season with mustard seeds and curry leaves
