Poha Kheer


Ingredients:
1 cup thick Poha/ beaten rice
2 tbsp ghee
1/4 cup cashew bits
1 cup thick coconut milk and 1 cup diluted coconut milk
1 cup grated jaggery
1 tsp Cardamom powder
2 tsp rice flour (optional)

Method:
Fry Poha and cashew in  ghee till u get a nice aroma. Keep aside.
Boil the poha, cashew and grated jaggery with the thin coconut milk. After poha becomes soft add the thick coconut milk, cardamom powder and keep stirring for 5-6 mins. You can Add rice flour diluted in a little water to this if the kheer is not thick.
