Ingredients:
1 large purple Eggplant
3 tsp oil
2 onions chopped
5 cloves of garlic chopped
1 inch ginger chopped
1 tsp coriander powder
1 tsp garam masala powder
2 tsp red chilli powder
1 tomato chopped
1/4 cup chopped red bell pepper

Method:
- Apply little oil on the eggplant and grill it on a gas stove till the skin becomes charred. Allow it to cool and remove the peel. Now mash the eggplant and keep aside.
- Heat oil in a kadai and fry onions till brown. Add ginger and garlic and fry till garlic turns brown.
- Add coriander powder, chilli powder and garam masala powder. Then add chopped tomatoes, chopped red bellpepper and fry till tomato becomes mushy.
- Add little water and cook till the gravy is thick. Now add the mashed eggplant, salt and mix well and cook for about 3-4 min.
