Prawns Biryani


This is one of the best Biryani that i have ever made. Tastes amazing with prawns but you can also try with chicken, mutton or egg ! Thank u Reshma Chander for this excellent recipe :-)

Ingredients:
2 cups basmati rice
Half kg prawns
5 onions sliced
3 tomatoes sliced
4 tbsp ghee 

3 tsp Lemon juice
2 bay leaves
5 cloves
2 cardamom
1/4 cup chopped coriander leaves
Few cashews and raisins (optional)

Make a fine paste of the following items mentioned below:
10 green chillies
2 tbsp coriander seeds
Marble sized tamarind
2'' ginger

8 cloves garlic deskinned
Half bunch of coriander leaves
10 stalks of mint leaves[ use only the leaves]
2 tbsp khus khus / poppy seeds- dry roast this on low flame for some time.
3 cloves

2 cardamom
1/2'' cinnamom
1 tsp cumin seeds
1 tsp pepper corns 
1 tsp fennel [ saunf].
Little turmeric powder


Method:

  • Marinate the cleaned prawns in salt , less than 1/4 tsp turmeric powder and keep aside.
  • In a kadai add ghee. Add half of the sliced onions and fry till light golden brown and crisp. Remove and drain on a kitchen towel. .
  • Now add the remaining sliced onions and saute till the raw smell goes . 
  • Then add the green masala paste and fry the paste till oil seperates.
  • Once the oil seperates add the tomatoes and saute till the tomatoes are cooked well.
  • Next add the marinated prawns and half cup of water. Close the vessel and cook on sim till the prawns is almost cooked and the gravy becomes thick
Prepare basmati rice:
  • Boil water in a pot . Add the rice, a tsp of salt, lemon juice, bay leaves, cloves and cardamom to the water .
  • Cook till 90% done. Drain and spread it on a plate
To Assemble:
  • In a serving dish first add a tsp of ghee, then a layer of the green prawn masala, then add a layer of basmati rice. Top this with little fried onion, chopped coriander leaves, few cashews, few raisins and sprinkle a pinch of garam masala powder . You can make 2 layers like this .
  • Only for the topmost layer add a sprinkling of yellow coloured rice to enhance the visual appeal . For this you will need a tsp of water , less than a pinch of yellow colour and a tbsp of cooked rice mixed well and sprinkled on the top layer. 
  • Heat it in the microwave for 5-10 mins before serving
