This is one of our family favourite sweet ! Though not so perfect in shape, the taste was delicious !
Ingredients :
1 cup maida
2 tbsp cornstarch
4 tbsp besan/ gram flour
Pinch of baking soda
3/4 cup yoghurt
2 tbsp ghee
Pinch of yellow food colour or 1/4 tsp turmeric powder
Water as needed
Oil to deep fry
For the sugar syrup:
1 ¼ cup sugar
1 ¼ cup water
2 tsp lemon juice
Pinch of yellow food colour or kesar
Method :
- In a bowl mix maida, cornstarch, baking soda, besan, ghee and food colour. Add yoghurt and mix well using a whisk. Add water a teaspoon at a time and make thick but flowing batter like idli or vada batter.
- Cover the bowl and keep it in a warm place to ferment for 12 hours.
- Make sugar syrup of one string consistency. Add food colour and lemon juice and keep aside.
- After 12 hours, bubbles will appear on the batter. Whisk it for a minute and pour it in a piping bag and make a hole neither too thick or too thin.
- Heat oil in a wide pan. When the oil is medium hot, start making jalebis holding the piping bag 3 to 4 inches above the surface of oil. You may not get the perfect shape in the first attempt. Do keep trying.
- Fry the jalebis for 7-8 minutes till it turns golden.
- Immediately soak it in sugar syrup and leave it for 2-3 minutes.
- Transfer to an airtight container.
