Ingredients:
3 large potatoes cubed
4 cups of spinach loosely packed
1 large onion chopped
6 garlic cloves chopped
2 tbsp oil
1 tsp cumin seeds
3 tsp red chilli powder
Half tsp turmeric powder
2 tsp coriander powder
1 tsp garam masala powder
1 tsp kasoori methi
Salt
2 tsp lemon juice
Method:
- Wash the spinach, remove the stem and chop them.
- Heat half tsp oil in a non stick pan and add the spinach. Fry for 2 minutes. Remove in a plate
- Heat the remaining oil in the same pan and add cumin seeds. When it begins to change colour, add the garlic and fry till it turns brown.
- Add the onions and fry till it becomes translucent.
- Add the cubed potatoes, salt and turmeric powder. Cover and cook on a low flame till potatoes are almost done. Do not add water.
- When the potatoes are 90% done add the spinach, chilli powder, coriander powder, garam masala powder and kasoori methi. Mix well and let it cook for another 5-10 minutes.
- Now add lemon juice and cook on high heat for 2 minutes. Serve with roti
