Beetroot Pachadi


Ingredients:
1 beetroot grated
1 tsp oil
Salt
1/4 tsp turmeric powder
1 tsp mustard seeds
1 tsp cumin seeds 
2 tsp grated coconut 
Small piece of ginger
2 green chillies
1 cup curds

For the tempering:
1 tsp mustard seeds
Few curry leaves
Half onion chopped

Method:

  • Heat oil in a pan. Add the beetroot, salt, turmeric powder and water and cook till it becomes soft. 
  • Grind mustard seeds, cumin seeds, grated coconut, ginger and green chillies to a fine paste. 
  • Add it to the beetroot mixture and cook till it becomes dry. 
  • Whisk the curds and add it to the beetroot and simmer it for 2 mins. Do not let it boil otherwise the curds will curdle. 
  • Season it with mustard seeds, curry leaves and chopped onion
