Biscuit Rotti


Ingredients:
1 cup grated coconut
2 green chillies
2 tsp oil + oil to deep fry
3 tsp mustard seeds
2 sprig curry leaves chopped
3 tsp urad dal
3/4 cup fine rawa
2 tsp hing
2 tsp red chilli powder
Salt

For the dough:
1.5 cups maida
1.5 cups wheat flour
2 tbsp hot oil
Salt

Method:

  • Coarsely grind grated coconut with green chillies.
  • Heat oil in a kadai. Add mustard seeds. When it begins to splutter add chopped curry leaves, urad dal. Fry till dal turns brown. 
  • Add fine rawa and fry till you get a nice aroma. 
  • Add hing and red chilli powder. Allow it to cool. 
  • Mix it with the coconut mixture. Add salt. This will be your stuffing
  • To make the dough mix the maida, wheat flour, salt and oil. Add enough water and make a stiff dough
  • Divide the dough into equal lemon sized balls and roll it to a small poori. Place 2 tsp stuffing, seal and roll again. Deep fry the rotti till it becomes brown and crisp
