Ingredients :
2 cups besan/gram flour
1 tbsp semolina
1 tbsp rice flour
1 tsp baking soda
A pinch of yellow food colour
1 tbsp ghee
Water to prepare batter
Oil to deep fry
For sugar syrup:
2 cups sugar
Half cup water
2 tbsp lemon juice
1 tbsp cardamom powder
Half cup chopped nuts (cashews and almonds)
2 tbsp raisins
Half cup warm milk
Method:
- Sieve the besan and remove in a large bowl.
- Add the semolina, baking soda, rice flour and food colour. Mix well
- Add ghee and water and make a smooth and lump free batter
- To make the sugar syrup, heat sugar and water in a sauce pan and boil it till you get one string consistency
- Switch off the flame and add lemon juice and cardamom powder.
- Heat oil in a large pan. Pour 1/4 cup of batter on a slotted spoon and tap it to release boondis into hot oil. Do not overcrowd the pan. Fry the boondis for just 2 minutes. Do not make it crisp.
- Repeat the process for the rest of the batter.
- Mix all the fried boondis in the sugar syrup. Add the nuts and raisins. Now add the milk and mix well
- Make laddoos when the mixture is warm enough to handle.
