This recipe is from one of my favourite food blog 'Garam Tawa' which belongs to Sri Kudpi Rajanikanth Shenoy. This blog has some authentic Mangalorean and GSB cuisine recipes.
Ingredients:
1 kg chicken cut into medium pieces
15 red chillies (10 short and 5 kashmiri chillies)
1 and half tbsp coriander seeds
Half tsp cumin seeds
Half tsp fenugreek seeds
Pinch of ajwain seeds
Half tsp peppercorns
Half inch cinnamon
3 cloves
6 garlic flakes
Half tsp turmeric powder
Small ball of tamarind
Half tbsp butter
1 cup water
Salt
1 big onion chopped + 1 small onion chopped
1 sprig curry leaves
Ghee for frying
Method:
- Heat ghee in a pan. Roast red chillies, coriander seeds, cumin seeds, fenugreek seeds, ajwain, peppercorn, cinnamon and cloves. Grind it with Garlic, turmeric and tamarind into a smooth paste.
- In a thick bottomed vessel, cook the chicken pieces with the ground masala, Butter, water, salt and chopped big onion on slow flame till done.
- Season the curry with curry leaves and chopped onions fried in ghee.
