Ingredients:
3 cups all purpose flour
1 cup milk
2 and 1/2 tbsp butter
2 tbsp oil
1 and 1/2 tsp salt
1 tsp baking powder
1 tbsp butter for basting
1 packet or 2 and 1/4 tsp active dry yeast
4 tsp water
3 tsp milk
2 and 1/2 tsp sugar
Method:
- To make the yeast mixture warm up 3 tsp milk, water and sugar. It must be lukewarm. Switch off flame and add the yeast. Mix well. Leave it for 5-10 minutes
- After 10 minutes it becomes frothy and bubbly
- If it does not become bubbly, discard it and start with a new packet
- In a large bowl, sieve the flour, baking powder and salt. Make a well in the centre and add 1 cup milk and the yeast mixture. Mix well.
- Now add the butter and oil. Keep kneading the dough for atleast 10 minutes. It should become smooth. Transfer it to a greased bowl and cover with a wet cloth. Keep it in a warm place to rise for atleast 1.5 to 2 hours
- The dough will be airy after 2 hours.
- Dust some flour and knead again for 5 minutes.
- Divide equally into 12 parts. Roll each of then into a smooth ball and place them in a greased tray.
- Cover again with a wet cloth and place it in a warm place for 45 minutes
- Preheat oven to 400 F
- When the dough has risen the pav will stick to each other, Brush the pav with milk and place in preheated oven and bake for 10-15 minutes or till the crust is golden brown
- Remove from oven and apply butter. Let them cool completely on a wired rack.
