Ingredients :
3 cups of roughly chopped spinach/ Palak
1 medium onion sliced
Salt to taste
1 tsp ajwain / carom seeds
3 green chillies finely chopped
1/4 cup chopped mint leaves
3/4 cup gram flour/ besan
3 tbsp rice flour
Oil for deep frying
Method:
- In a large bowl add the palak, onion, green chillies, salt, ajwain and mint leaves. Squeeze well with your hands
- Add the besan and rice flour and mix well. Squeeze while you mix.
- The onion and salt will release water, so you need not add water to make the batter. If required just add 1 tsp of water at a time and mix well.
- If the batter is thin add more besan.
- Heat oil in a kadai on a medium heat
- Add a spoonful of batter into the oil and deep fry till the pakodas become crisp. Serve with mint chutney or tomato ketchup
