Ingredients :
1.5 cups Besan - I have used the coarse variety of besan also known as Ladoo Besan (Chickpea Flour)
8 tbsp ghee / clarified butter
3 cardamom pods
5 cashews
5 almonds
Half cup sugar
Method :
- Heat ghee in a thick bottom pan. When it is slightly hot, add the chickpea flour/besan.
- Keep stirring on a medium flame continuously for 15-20 minutes till the flour changes colour and gives a good aroma. DO NOT stop stirring the flour or it will easily burn. The time will vary if you are increasing the quantities of the ingredients.
- Remove the roasted flour on a plate and slightly cool it.
- Meanwhile grind the sugar, cardamom, almonds and cashews together in a blender. Make a fine powder.
- Add the sugar powder to the slightly warm flour. Mix well with your fingers.
- Start shaping the laddoos when the mixture is warm. If the laddoos dont hold shape, add more ghee. If the mixture cools down, place it in the microwave for about 20 seconds and shape them again.
- Once the laddoos are ready, let them cool completely and then store it in a jar. This recipe yields 15 small sized laddoos.
