Chicken Biryani


Ingredients:

For the Chicken masala:

1/2 Kg chicken
1/2 cup yoghurt
half bunch of coriander leaves
half bunch of pudina leaves
1/2 tsp jeera
salt
4 chopped green chillies
8 garlic flakes chopped
1 inch ginger chopped
1/2 tsp haldi
 1 tsp lime juice.

3 tsp ghee
3 onions sliced
2 cups Basmati rice
1 bay leaf
 3 cardomom
2 cloves
1 inch cinnamon
1 tbsp ghee.

Method :

Marinate chicken with yoghurt, coriander leaves, pudina leaves, jeera, salt, green chillies, garlic, ginger. turmeric and lime juice. Prick with a fork. And keep it for an hour.
In a pan, heat ghee. Fry  sliced onions till brown. Add the marinated chicken and cook till done.
Soak Basmati Rice for 1/2 an hr. Boil it along with bay leaf,  cardomom,  cloves, cinnamon and  ghee. drain when the rice is 3/4th done. Do not overcook the rice. Spread it on a plate and allow it to cool.

For assembling :
In a heavy - bottomed vessel , spread a layer of chicken masala and half portion of cooked rice. Make 2 layers with cooked rice chicken masala.
Cover with a tight lid. Seal with maida dough on the edges of the lid. Heat an iron tawa. Keep biryani pot over it. Cook on a low heat for 25 - 30 minutes.
