Chilli Chicken Biryani


Ingredients:
  For the Rice :
    2 cups Basmati Rice
    Salt
    2 tsp cumin seeds
    2 tsp fennel seeds
    1 inch of cinnamon
    5 cloves
    2 pods of cardamom
    10 peppercorns
    3 bay leaves
    1 star anise
    A pinch of yellow food colour
  
  To make the chilli chicken:
    2 cups of chicken cut into strips
    1 tsp ginger garlic paste
    Salt
    3 tsp maida
    2 tsp cornstarch
    2 tsp vinegar
    Oil to deep fry or shallow fry
    
    3 tsp oil
    8 garlic chopped
    2 medium onions sliced
    1 cup tomato puree
    5 tsp chilli powder
    3 green chillies slit
    2 tsp cumin powder
    2 tsp coriander powder
    2 tsp garam masala powder
    1 tsp turmeric powder

    2 tsp ghee
    Coriander leaves to garnish
    Few strands of saffron dissolved in warm milk


Method:

  • To make the rice, Boil water in a large pot. Tie cumin seeds, fennel seeds, cinnamon, cloves, bay leaves, cardamom, peppercorns and star anise in a small muslin cloth and secure it with a thread. Put it in the boiling water. Add the soaked rice and salt. Cook the rice till it is almost done. Remove the spice potli. Drain the water and spread the rice on a plate to cool. Mix food colour with the rice,
  • Marinate chicken with salt, ginger garlic paste and vinegar for 30 minutes. Then sprinkle maida and cornstarch on the chicken. Mix well and deep fry or shallow fry till the chicken is cooked
  • Heat oil in a pan. Fry the garlic till it is brown. Add the onions and saute till it turns golden brown.
  • Add the tomato puree and cook till oil leaves the masala
  • Now add green chillies, chilli powder, cumin powder, coriander powder, garam masala powder, turmeric powder and saute for a minute.
  • Add the chicken and little water. Check seasoning, Mix well and cook till the chicken is nicely incorporated with the masala.
  • To assemble layer the chicken in the bottom of a kadai. Then spread all the cooked rice on top. Heat the ghee and pour on the biryani. Also pour the saffron milk. Garnish with coriander leaves and serve with raitha
