Vermicelli Upma


Ingredients:
2 cups Rice Vermicelli
2 chopped onion
3 chopped green chillies
2 tsp mustard seeds
1 tsp urad dal
1/2 cup chopped Carrot
2 tbsp chopped cashew
1 tsp turmeric powder
Salt
2 tbsp grated coconut(optional)
Coriander leaves to garnish

Method:
Cook the Vermicelli till it is 90% done. Drain the water and spread it on a plate to cool
Heat oil in a large pan. Add the Mustard seeds and allow it to splutter. Then add the urad dal, green chillies, and cashew. Once the urad dal changes colour add the onions and fry for a minute. Then add in the carrots and salt, Cover and cook till carrots become soft. Add the turmeric powder and the cooked vermicelli. Mix well. Add the grated coconut and coriander leaves and serve warm
