Egg Butter Masala


This recipe of  rich and creamy egg butter masala belongs to my friend Suphala Shenoy

Ingredients:
10 boiled eggs cut into half
4 tomatoes cut into quarters
2 onions diced
10 cashewnuts
2 tsp oil
2 tbsp butter
2 tsp ginger garlic paste
3 tsp red chilli powder
2 tsp kasoori methi
Salt
2 tsp honey
3 tsp garam masala powder
1/4 cup cream
Coriander leaves to garnish

Method:

  • Heat oil in a kadai. Add the tomatoes and onions and fry till tomatoes becomes soft. Allow it to cool and grind it with the cashenuts into a fine paste.
  • Dry roast Kasuri methi and keep aside
  • Heat butter in the same kadai and add Ginger garlic paste saute for a minute. 
  • Then add red chilli powder and fry. 
  • Add the ground tomato and onion paste cook for about 10 mins on low flame. The mixture should become dry. 
  • Add salt, honey and garam masala powder and mix nicely. 
  • Then add Kasuri methi and boiled eggs and mix well and cook for another 3-4 mins. You can add a little water if it becomes too thick. 
  • Then finally add some cream and garnish with coriander leaves and serve hot with Rotis
