Ingredients:
- 1 cup Maida + 1 tsp for coating then blueberries
- Half tbsp Baking Powder
- Half tsp Salt
- 8 tbsp unsalted Butter or 1 stick (at room temperature)
- 3/4 cup Sugar
- 1/3 cup milk
- Half cup yoghurt
- Half cup fresh Blueberries (you can use the frozen ones but please do not thaw them)
- Half tsp Vanilla Extract
Method:
- Preheat oven to 350 F
- In a bowl combine the flour, salt and baking soda and keep aside
- In another large bowl, beat butter and sugar until fluffy.
- Add vanilla. Add the yogurt and milk and beat until combined.
- Fold in the flour mixture and mix well
- In a separate bowl toss the blueberries in 1 tsp maida
- Gently fold in the blueberries in the cake batter. Reserve a few to place it on top of the batter.
- Pour the batter in a greased tray and arrange the remaining blueberries on top.
- Bake in the preheated oven for 40-45 mins and cool it completely before cutting it into slices
