Eggless Blueberry Cake

Ingredients:
  • 1 cup Maida + 1 tsp for coating then blueberries
  • Half tbsp Baking Powder
  • Half tsp Salt
  • 8 tbsp unsalted Butter or 1 stick (at room temperature)
  • 3/4 cup Sugar
  • 1/3 cup milk
  • Half cup yoghurt
  • Half cup fresh Blueberries (you can use the frozen ones but please do not thaw them)
  • Half tsp Vanilla Extract
Method:
  • Preheat oven to 350 F
  • In a bowl combine the flour, salt and baking soda and keep aside
  • In another large bowl, beat butter and sugar until fluffy.
  • Add vanilla. Add the yogurt and milk and beat until combined.
  • Fold in the flour mixture and mix well
  • In a separate bowl toss the blueberries in 1 tsp maida
  • Gently fold in the blueberries in the cake batter. Reserve a few to place it on top of the batter.
  • Pour the batter in a greased tray and arrange the remaining blueberries on top.
  • Bake in the preheated oven for 40-45 mins and cool it completely before cutting it into slices
