Fire Truck Cake - Happy Birthday Ayush !!!


This is my first ever frosted cake ! I tried my best at the frosting but I know I need to improve a lot, but I was happy with the outcome. I made this fire truck cake for my son's 3rd Birthday as he is very fond of fire trucks. It was a surprise for him. He was very happy to see the cake and couldn't wait to cut it. The smile on his face after seeing the cake made my day !! 

I followed Betty Crocker Fire Truck Cake video to assemble the cake. You can watch it here
The base of the cake is Eggless Vanilla Sponge Cake. I followed sharmispassion for the cake recipe.
I made 3 cakes in 8 X 4 inch loaf pans. 

Ingredients :
  For the eggless sponge cake (3 cakes)
      4.5 cups maida
      3 cups curds at room temperature
      2 1/4 cups granulated sugar (I used 2 cups only)
      1.5 tsp baking soda

      3 3/4 tsp baking powder
      1.5 cups oil
      4.5 tsp vanilla essence

For the frosting and decorations
      1 container Betty Crocker Rich and creamy Vanilla Frosting
      Red gel food colour
      Blue gel food colour
      14 M&M's or Gems
      4 Cream filled chocolate cookies

You will also need:
       Platter, tray or cardboard (14x10 inches), covered with wrapping paper and plastic food             wrap or foil
      Piping bags
      
Method:   
  • Sieve Maida and keep aside
  • Cream curds and sugar in a very large bowl till sugar dissolves completely.
  • Add baking soda and baking powder to the sugar+curds mixture and mix well. Leave aside for 5 mins and you can see the bubbles appearing. 
  • Now add vanilla essence,cooking oil and mix well.
  • Next slowly add maida in portions at a time and blend with wet ingredients. Beat well with a whisk until creamy and thick.Preheat oven to 200 deg C for 10mins. Meanwhile grease 3 butter papers, lay it in the loaf pans and pour the batter to the tins equally and keep it ready.
  • Bake in preheated oven at 200 degree C for 10 mins, then reduce temperature to 180 deg C and bake it for 30-35 mins or till a fork inserted into the center of the cake comes out clean. 
  • Remove from Oven and allow it to cool.
  • Invert it on the kitchen counter and let it cool COMPLETELY.
  • Place the cakes dome side up and slice of the domes of all the 3 cakes with the help of long serrated bread knife.
  • Arrange the cakes in the shape of fire truck (Follow the link given above)
  • Take 3/4 of the frosting and mix in the red gel food colour. Crumb coat the entire cake and keep in the refrigerator to set for 1 hour.
  • Do the second layer of frosting with the same red coloured frosting. 
  • You can do the decorations as you wish. I mixed blue gel food colour in the remaining 1/4 frosting and filled it in a piping bag. Cut a small hole and draw the fire hose and ladder.
  • Trim the piping bag a little more and finish off with the windows and windshield. 
  • Place the cookies 2 on each side for the wheels and make head lights, tail lights and flash lights with M&M's
