Jhunka Vadi


This easy , healthy and tasty snack goes well with a cup of tea or coffee. I tasted this snack made by my friend Geeta and I loved it a lot. So here is the simple recipe of this delicious snack which can be made in less than 20 minutes

Ingredients:
1 cup gram flour/besan
2.5 cups water
Salt
1/4 tsp sugar
1/4 tsp turmeric powder
Half tsp chilli powder
1 tsp oil + 1/4 tsp to grease a plate
1/4 tsp mustard seeds
Half tsp cumin seeds
1 small onion finely chopped
2 tsp ginger garlic paste
Coriander leaves to garnish

For the tempering:
Half tsp oil
2 tbsp white sesame seeds
4 curry leaves finely chopped

Method:

  • Mix the gram flour , sugar, salt, chilli powder and turmeric powder. Add water and make a lump free batter
  • Heat oil in a non stick pan and add mustard seeds. Once it begins to splutter add cumin seeds and fry till it changes colour
  • Then add the onion and fry for 2 minutes. Add the ginger garlic paste and saute till the raw smell goes off
  • Now add the gram flour batter and keep stirring with a wooden spatula on low flame till the mixture becomes thick and glossy. This step is slight tedious. Make sure you stir it on a low flame.
  • Pour the mixture on a greased plate and spread it evenly and let it cool.
  • Prepare the tempering by heating oil in a tadka pan and add curry leaves and sesame seeds. Do not let the sesame seeds change colour. 
  • Pour the tadka on the vadi and spread it. Garnish with coriander leaves. Cut into square shapes and serve this delicious snack with ketchup and a hot cup of tea/coffee
