Rawa Laddoo


This delicious recipe of soft and melt in the mouth Rawa Laddoo was given by my dear friend Veena Prashanth. Thank you so much dear Veena for showing me how to make rawa laddoo. I will follow this recipe forever. 

Ingredients:

2 cups fine semolina
1 cup coarsely powdered nuts (I have used cashew and almonds)
1 and 1/2 cup sugar (You may increase or decrease the quantity as per taste)
1 cup water
5 tsp ghee
2 tsp cardamom powder

Method :

  • Make a coarse powder of the nuts in a blender. You may also use chopped nuts roasted in ghee to make the laddoo. But by using the powdered nuts, its easier to shape the laddoos.
  • Heat the ghee in a wide non stick pan. Add the semolina and roast for just 7-8 minutes or till it slightly changes colour. Remove on a plate
  • Add the sugar and water in the same pan and boil it to one string consistency. You can check it using your thumb and index finger or take some water in a bowl and put a drop of sugar syrup into it, If it mixes with the water, its not ready. If you are able to form a mass then it is ready. Making the right consistency of sugar syrup for these laddoos is very important
  • Once the syrup is done, remove from flame and add the semolina, powdered nuts and cardamom powder. Mix well. Cover and keep it for 20 minutes
  • Scrape the mixture with a fork little by little and shape laddoos while the mixture is still warm
  • Store in airtight container
  • As there is no milk and coconut in these laddoos, it stays fresh for atleast 15 days
