Chicken Quesadilla with Pico De Gallo


Ingredients:

Chicken Quesadilla:
1 cup boneless chicken cut into small pieces
3 sliced onion
6 brussel sprouts chopped
1 capsicum chopped
8 mushrooms sliced
5 garlic chopped
4 tbsp tomato ketchup/ pasta sauce
Salt
3 tsp pepper powder
1 cup Mozarella cheese
3 tsp olive oil
5 tortillas (I have used Wheat Tortilla)

Method :
Heat oil in a pan. Fry the sliced onion till translucent. Add in the brussel sprouts, capsicum, chicken and mushrooms and cook till chicken is cooked. Put the garlic, Ketchup/pasta sauce, salt, pepper powder. Stir and keep aside to cool.
Take a Tortilla. Spread 2 tbsp of the chicken masala. Top it with lots of mozarella cheese. Fold it into half and saute it on a tawa with little oil till it turns brown. 

Pico de Gallo:
2 onions finely chopped
1 tomato finely chopped
Salt
Juice of half lemon
2 green chillies or jalapeno chopped
Coriander leaves

Method:
Mix all the above ingredients and serve immediately
