Ingredients :
1/2 Litre Full Cream Milk
1 1/2 tbsp Corn starch
1 1/2 tbsp GMS(Glyceryl Mono Stearate)
1/2 tsp CMC(Carboxy Methyl Cellulose)
8 tbsp Sugar
100gms Fresh Cream
5 gms Nescafe Coffee Powder
15 Roasted almonds
Method :
1. Boil the Milk until it condenses to half its original volume and cool it.
2. Take CMC,GMS,Corn Flour in a small bowl and add just enough milk to dissolve them completely.
3. Add Sugar to the cooled milk and boil the milk until all the sugar dissolves.
4. On a low flame, add the mixture from Step 2 to this milk with constant stirring.
5. Turn off the gas once the mixture becomes thick.
6. Cool this mixture in a water bath with constant stirring.
7. Once the mixture attains room temparature, pour it into an air-tight container and place it in the refrigator ( NOT in the deep freezer compartment).
8. After 2-3 hours, take it out and add the coffee powder. Using a hand blender, blend the mixture to a smooth and creamy texture.
9. Place it in the freezer for around 3 hours.
10. Blend it once more. Add the roasted almonds and place it in the freezer for atleast 3-4 hours again.
