Mint Cauliflower Parantha


This recipe is from my Relative and my friend Madhukanthakka. Thank you so much for the recipe dear akka.

Ingredients:
1 cup grated cauliflower
1/2 cup finely chopped mint leaves
1 tsp Amchur/dry mango powder
1 tsp garam masala powder
Salt
Half tsp oil + more oil for frying parathas
2 cups wheat flour

Method:
Knead a soft dough with wheat flour, salt and water. Cover with a damp cloth and set aside
Heat half tsp oil in a pan. Add the grated cauliflower and fry for 3 mins. Then add the mint leaves and saute for a minute. Remove from flame and allow to cool. Then add the garam masala powder and amchur powder.  Do not add salt at this stage. Salt should be added while making paranthas with the stuffing.
Make parathas the usual way.
