Vaingana Sagle (Green Brinjal Dry Curry)


Ingredients:
Green brinjal - 5 cut into large chunks. You can use tiny brinjals also. In that case just put a cross                                mark at the bottom and put the whole brinjal in the curry.
1 cup grated coconut
Marble sized tamarind
4 round red chillies roasted
1 tsp coriander seeds
1/4 tsp fenugreek seeds
2 tsp oil
1 tsp mustard seeds
1 sprig curry leaves
Salt

Method:
Dry roast the coriander seeds and fenugreek seeds till you get a nice aroma. Transfer on a plate and allow it to cool
Make a coarse paste of grated coconut, tamarind, red chillies and the roasted coriander seeds + fenugreek seeds.
Heat oil. Add mustard seeds and  curry leaves. Add the ground masala and fry for 5-6 mins. Add the brinjal, little water, salt and cook till done
