Aam ki Launji (Raw Mango Relish)

Ingredients:

2 raw mangoes peel and cut lengthwise
Sugar - weigh the mango after cutting it. Use equal amount of sugar or less
2 tsp oil
2 tsp Mustard seeds
1 tsp Fenugreek seeds

1 tsp Fennel seeds
Half tsp Turmeric powder

Salt to taste
1 tsp Chilli powder

A pinch Cardamom powder (optional)

Method:


  • Heat oil in a kadai. Add the mustard, fenugreek and fennel seeds. When they begin to change colour and the mango, turmeric and salt and cover and cook till mangoes become soft. Do not add water.
  • Add sugar, chilli powder and cook till sugar melts and the gravy becomes thick. Add cardamom powder (optional). Allow to cool and store in a jar
