Carrot Halwa


Ingredients:
1 kg carrots 
2 cups milk
Handful cashew bits
1.5 cups sugar (Increase or reduce as per liking)
1/4 cup ghee
3 tsp cardamom powder

Method:
Grate the carrots.
Put the carrots, milk and cashews in a big non stick kadai and cook it on medium flame till carrots become soft. Add the sugar and cook it till the mixture becomes dry. This will take atleast 20-25 minutes. Keep stirring ocassionally to avoid burning at the bottom of the kadai. 
Then add the ghee and cardamom powder and serve warm or chilled
