Boiled Fruit Cake


Ingredients:
1 cup brown sugar
1 cup water
1/4 cup butter
1/2 tsp cinnamon powder
1/2 tsp cloves powder
1/2 tsp ginger powder
1/2 tsp salt
1 cup raisins
2 eggs, slightly beaten
1 1/2 cups all purpose flour
1/2 cup chopped nuts (walnuts, cashew)
1/2 cup candied fruit
1 tsp baking soda
1 tsp vanilla essence


Method:

  • In a large saucepan, over medium heat, bring to a boil the sugar, water, butter, cinnamon powder, cloves powder, ginger powder and raisins. Boil for five minutes, then remove from heat, and let cool till lukewarm. 
  • Grease a loaf pan. Preheat oven to 325 F for 10 minutes
  • Stir into this mixture the lightly beaten eggs, nuts, salt, flour, baking soda, candied fruit and vanilla extract .
  • Pour into your prepared pan and bake for 50 -65 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and let cool on a wire rack.
