Egg Omelette Curry

Ingredients:

For the omelette :
    2 eggs
    Salt to taste
    Half onion chopped
    3 tsp Coriander leaves chopped
    1 tsp pepper powder
    Half tsp oil
To be ground to a fine paste:
    Half cup grated coconut
    1 tsp cumin seeds
    Half tsp fennel seeds
    2 garlic cloves
    2 tsp coriander powder
    1/4 tsp turmeric powder
    1 tsp chilli powder
    2 tbsp coriander leaves chopped
    1 inch ginger
For the Gravy:
    1 small onion chopped
    2 tomatoes chopped
    1 tbsp oil
    Salt
    Coriander leaves to garnish


Method:

  • Combine all the ingredients mentioned under "to be ground" in a blender and make a smooth paste
  • Break eggs in a bowl. Add the remaining omelette ingredients except oil and whisk it. Heat a non stick pan and make omelette. Fry on both sides till it becomes crisp. Cut into squares and keep aside
  • To make the gravy, heat oil in a kadai and fry the onions till it becomes brown. Then add the curry paste and fry for 3-5 minutes till the spices are cooked well. 
  • Then add the tomatoes and salt. Cook till the tomatoes become mushy
  • Add water according to the desired consistency of the gravy. Cover and cook for 5 minutes.
  • Then add the omelette pieces and cover and cook again for 3-4 minutes
  • Garnish with coriander leaves
