Stuffed Baingan Masala


Ingredients:

6 small purple brinjals. (Remove the stem. Keep the crown intact. Put a cross mark leaving 1/2 inch from the crown)
1 onion chopped
1 tomato chopped
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1 tsp chilli powder
1 tsp ginger garlic paste
1/4 tsp turmeric powder
2 tsp coriander powder
1 tsp garam masala powder
1/2 cup peanuts (roasted)
1 tbsp sesame seeds (roasted)
2 tbsp coconut(roasted)
1/2 tsp jaggery
Salt to taste
Coriander leaves for garnishing


Method:
  • Grind peanuts, sesame seeds and coconut together. Make a fine powder. Remove in a bowl. To this add chilli powder, turmeric, coriander powder, garam masala powder and salt. Mix well. 
  • Stuff this mixture into the brinjals with a knife. Make sure not to break the brinjals. Keep aside.
  • Heat oil in a thick bottomed kadai. Add cumin and mustard seeds. When it begins to splutter add curry leaves. 
  • Then add onions and fry till it changes colour. Add the ginger garlic paste and saute for a few mins.
  • Add tomato and fry till oil levaes the sides. Add the remaining stuffing masala, 1/4 cup water, jaggery and mix well. 
  • Add the brinjals and salt if necessary. Cover and cook on low flame till done. Keep stirring occasionally. Garnish with coriander leaves
