Eggless Checkerboard Cookies


Ingredients:

Vanilla Dough:
   Half cup unsalted butter
   Half cup sugar
   2 tsp Vanilla essence
   1 and 1/4 cup all purpose flour
Chcoclate Dough:
   Half cup unsalted butter
   Half cup sugar
   3 tsp cocoa powder
   1 and 1/4 cup all purpose flour

Method:

  • To make the vanilla dough mix the butter and sugar till it is well incorporated. Now add the vanilla essence. Mix well. Add the flour and mix well. Transfer on a clean and dry surface and mix well to form a dough. Shape it in a rectangle and wrap it in a cling film and refrigerate it for half an hour
  • To make the chocolate dough, mix the butter and sugar till it is well incorporated. Now add the cocoa powder. Mix well. Add the flour and mix well. Transfer on a clean and dry surface and mix well to form a dough. Shape it in a rectangle and wrap it in a cling film and refrigerate it for half an hour
  • Remove the vanilla dough and place it on a parchment paper. Cover it with another parchment paper and start rolling it. Remove the top parchment paper and Cut it in a square measuring 7 inch by 7 inch. Now cut this square into slabs of equal width. Repeat the same procedure with the chocolate dough
  • Now make two blocks of dough alternating the colours. Onw block will be Vanilla-Chocolate-Vanilla and the other will be Chocolate-Vanilla-Chocolate
  • Cut each block into 3 strips lengthwise. Now rearrange these strips again alternating the colours and create 2 blocks of dough
  • Individually wrap these blocks in cling film and refrigerate again for half an hour
  • Preheat oven to 300F
  • Remove the dough from fridge and cut into 1/4 inch thick slices.
  • Arrange on a tray and bake for 10-12 minutes
  • Remove and let it cool on a wire rack.
