Phenori


This recipe is from my aunt who makes one of the best Phenoris. Thank u Nandinekka for this recipe.
Phenori is a traditional GSB sweet. It can be made by sprinkling powdered sugar or by soaking it in sugar syrup. 

Ingredients:
2 cups maida
Pinch of salt
Water to knead the dough
Half cup of fine rawa
Ghee
Oil to deep fry
1.5 cups powdered sugar
1 tsp Cardamom powder


Method:

  • Mix maida and salt. Add water and make a stiff dough. Cover and keep for 15 minutes
  • Mix sugar powder with the cardamom powder.
  • Divide the dough into 10 equal balls.
  • Roll out each ball into very thin chapatis. Roll it as thin as possible
  • Place one chapathi on a flat surface and apply ghee evenly and sprinkle some rawa.
  • Now place the second chapathi on the first one leaving a gap of 3/4 inch on top. Apply ghee and rawa. Repeat the process with 3 more chapathis. This way you will have 5 chapathis in one log. Start rolling it from the bottom. Roll it tightly. Repeat this for the remaining 5 chapathis and make another log
  • Cut each log into 1 cm thick pieces.
  • Roll out each piece again into small puris and deep fry them in medium hot oil till it becomes golden brown.
  • Drain on a kitchen towel and when it is still warm sprinkle sugar powder on it.
  • Store in an airtight container after it cools down
